  • 3 - Add spices and tomato paste:
    Stir in sweet and smoked paprika powders and tomato paste. Cook, stirring frequently, for 2-3 minutes to release aromas and caramelize the paste.
  • 4 - Combine with broth and seeds:
    Pour in the warm vegetable broth. Add toasted sunflower seeds and bay leaf if using. Bring the mixture to a gentle simmer.
  • 5 - Simmer the goulash:
    Reduce heat to low, cover, and let simmer gently for 40-45 minutes, stirring occasionally until the vegetables are tender and the stew thickens slightly.
  • 6 - Season and Garnish:
    Remove the bay leaf. Season with salt and freshly ground black pepper to taste. Garnish with freshly chopped parsley before serving warm.
