Instrucciones

  • 1 - Prepare Cure Mix:
    In a bowl, combine coarse sea salt, white sugar, crushed white peppercorns, juniper berries, lemon zest, chopped dill, and chopped spruce tips (if using). Mix thoroughly to distribute flavors.
  • 2 - Apply Cure to Salmon:
    Place the salmon fillet skin-side down on a large piece of cling film. Rub the cure mix evenly over the flesh side, pressing gently to coat every surface.
  • 3 - Wrap and Weight:
    Wrap the salmon tightly in cling film. Place it in a shallow dish, then set a weight (a heavy cast iron skillet or stacked cans) on top to press the fillet down for uniform curing.
  • 4 - Refrigerate and Cure:
    Refrigerate the wrapped salmon with weight for 48 hours, turning over gently at 24 hours to ensure even curing and moisture distribution.
  • 5 - Rinse and Dry:
    After curing, unwrap and gently rinse the cure off the salmon under cold running water. Pat dry thoroughly with paper towels.
  • 6 - Slice and Serve:
    Using a sharp slicer or knife, thinly slice the salmon against the grain. Garnish with fresh dill and lemon slices. Serve chilled with rye bread or crispbreads.
