Istruzioni

  • 1 - Activate the Yeast:
    In a bowl, stir yeast and honey into the warm water. Allow to bloom for 5-10 mins, until frothy.
  • 2 - Make the Dough:
    Combine flour and salt in a bowl. Add the bloomed yeast mixture, 2 tbsp olive oil, and yogurt if using. Mix to combine.
  • 3 - Knead Until Elastic:
    Turn dough onto a floured surface. Knead until soft, smooth, and pliable, about 8-10 minutes.
  • 4 - First Rise:
    Place dough in an oiled bowl. Cover and let rise in a warm (ideally sunny) spot until doubled in size.
  • 5 - Shape Flatbreads:
    Divide risen dough into four balls. Roll or pat into rounds about 1 cm thick.
  • 6 - Add Za’atar and Sesame:
    Mix za’atar with a remaining 1 tbsp olive oil. Spread over each bread, sprinkle with sesame seeds.
  • 7 - Sunbake or Oven-bake:
    For sunbaking: Set flatbreads on a baking sheet and place in direct sunlight for 15-20 min to crisp. Alternatively, bake at 220°C (425°F) for 8-10 min until golden.
  • 8 - Serve:
    Let cool slightly; serve warm with extra olive oil, labneh, or your favorite dips.
