• 1 - Prepare the Ingredients:
  Chop the tomatoes, green bell pepper, and onion into manageable pieces.
• 2 - Sauté Vegetables:
  In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
• 3 - Add Peppers and Tomatoes:
  Include the chopped green bell pepper and tomatoes. Stir well and cook until tomatoes break down.
• 4 - Season the Sofrito:
  Add cumin, salt, black pepper and optionally chili powder. Stir favorites and let simmer.
• 5 - Finish with Cilantro:
  Remove from heat and mix in chopped cilantro for freshness. Adjust seasoning as necessary.
