• 1 - Prepare Glasses:
  Fill two tall glasses three-quarters full with crushed ice for an instantly chilled base.
• 2 - Mix Fruit and Mint:
  In a shaker or jar, add pineapple juice, lime juice, white sugar (if using), and torn mint leaves. Lightly muddle the mint to release oils.
• 3 - Combine and Shake:
  Fill the shaker with a few cubes of ice, cover, and gently shake to combine and chill the mixture.
• 4 - Pour and top up:
  Strain the fruity-mint mixture equally into the prepared glasses over the crushed ice. Top with chilled tonic water and gently stir.
• 5 - Garnish and Serve:
  Garnish each glass with a pineapple slice, a scatter of lime zest, and a sprig of fresh mint. Add a lime wedge to the rim for extra zestiness.
