• 1 - Make Lavender Simple Syrup:
  In a small saucepan, combine 100ml water, 100g sugar, and 2 tsp culinary-grade dried lavender. Simmer until sugar dissolves, then strain and cool.
• 2 - Prepare the Shaker:
  Add gin, lavender syrup, fresh lemon juice, optional egg white, and honey into a cocktail shaker.
• 3 - Dry Shake:
  Seal and shake vigorously without ice for 20 seconds to emulsify the egg white and create frothiness.
• 4 - Wet Shake With Ice:
  Add the ice cubes to the shaker. Shake hard for 30 seconds to chill and dilute the cocktail.
• 5 - Strain and Serve:
  Strain into a chilled coupe or martini glass, ensuring a smooth pour for a cloud-like foam if using egg white.
• 6 - Garnish:
  Garnish elegantly with a lavender sprig and a twist of lemon zest to finish.
