Istruzioni

  • 1 - Prep Ingredients:
Rinse moong dal and urad dal (if using) well. Drain. Gather flattened rice, spices, curry leaves and slit the green chili.
  • 2 - Roast dals:
Heat 1 tbsp oil in a large pan. Add moong dal and urad dal. Roast on medium flame until golden and aromatic, about 6-7 mins. Remove and set aside.
  • 3 - Roast chura:
In same pan, add 1 tbsp oil and heat. Add flattened rice and roast gently on low medium heat, stirring often, till dry and lightly crisp - about 4-5 mins. Remove from pan and keep aside.
  • 4 - Prepare tadka:
Add remaining oil to pan, heat. Add mustard seeds; once they sputter, add cumin seeds, slit green chili, and curry leaves. Fry for 30 seconds. Add turmeric powder and hing. Stir well.
  • 5 - Combine and roast all:
Return roasted dals and chura to pan. Add salt. Mix gently. Roast on low flame for 3-4 mins so all flavors blend and mix well. Avoid burning.
  • 6 - Cool and Serve:
Allow it to cool slightly before serving. Best enjoyed as snack or light meal with tea.

A crunchy, savory roasted dish of flattened rice and moong dal seasoned with spices.

Chura Moong Dal Shada Bhuna

Chura Moong Dal Shada Bhuna is a classic Indian snack hailing predominantly from eastern India, especially Bihar and West Bengal regions, where flattened rice (chura) is a dietary staple. This dish combines the crunch of roasted green gram dal and flattened rice, melded with aromatic spices like mustard, cumin, and curry leaves to create a nutritious, flavorful, and satisfying savory treat. Traditionally prepared during major festivals or served as a light snack, this recipe is cherished for its unique texture combinations and the wholesome protein boost moong dal provides. The roasting process enhances flavors and preserves shelf life a bit while offering a dry, easy-to-eat meal component. Flat rice flakes used here provide quick energy and digestibility, making this dish both an excellent snack or an on-the-go meal option.

Tips for optimal results:

  • Use thick blown flat rice, not the fine powdered chira, for the ideal crunchy texture.
  • Roasting the lentils properly until golden brings nutty flavors and avoids mushiness.
  • Adjust green chili quantity depending on your heat preference.
  • Peanut oil complements the spices best but vegetable oil can be used as a substitute.
  • Consume fresh as texture and crispness diminish if stored for several days.

Culturally, Chura dishes reminiscent of this preparation are a symbol of rustic simplicity yet nutritional richness common in Indian village kitchens. Its portability and calorie-density also make it favored by laborers for a quick sustaining bite. The blend of proteins and carbs with aromatic spices embodies the essence of Indian countryside culinary artistry, blending humble ingredients into deeply satisfying food. Experiment with adding nuts or dry grated coconut for a nuanced twist to this timeless recipe.
