• 1 - Prepare Honey Syrup:
  Combine equal parts honey and hot water; stir until honey dissolves. Let cool.
• 2 - Juice the Citrus:
  Squeeze fresh lemons to obtain 40ml lemon juice. Set aside.
• 3 - Mix Ingredients:
  In a shaker with ice, combine gin, lemon juice, honey syrup, and elderflower liqueur.
• 4 - Shake:
  Shake vigorously for about 15 seconds until well chilled.
• 5 - Strain & Serve:
  Strain cocktail into two chilled glasses, optionally top with chilled club soda.
• 6 - Garnish:
  Add a fresh thyme sprig and orange peel twist to each glass for aroma and appeal.
