Instructions

  • 1 - Prep Ingredients:
    Rinse moong dal and urad dal (if using) well. Drain. Gather flattened rice, spices, curry leaves and slit the green chili.
  • 2 - Roast dals:
    Heat 1 tbsp oil in a large pan. Add moong dal and urad dal. Roast on medium flame until golden and aromatic, about 6-7 mins. Remove and set aside.
  • 3 - Roast chura:
    In same pan, add 1 tbsp oil and heat. Add flattened rice and roast gently on low medium heat, stirring often, till dry and lightly crisp - about 4-5 mins. Remove from pan and keep aside.
  • 4 - Prepare tadka:
    Add remaining oil to pan, heat. Add mustard seeds; once they sputter, add cumin seeds, slit green chili, and curry leaves. Fry for 30 seconds. Add turmeric powder and hing. Stir well.
  • 5 - Combine and roast all:
    Return roasted dals and chura to pan. Add salt. Mix gently. Roast on low flame for 3-4 mins so all flavors blend and mix well. Avoid burning.
  • 6 - Cool and Serve:
    Allow it to cool slightly before serving. Best enjoyed as snack or light meal with tea.
