1 - Make Wheat & Spice Syrup:
In a saucepan, combine 1 part wheat berries, 2 parts water, 1 part sugar, and a small pinch each of cinnamon and nutmeg. Simmer gently for 5-7 minutes, strain to obtain the syrup, then cool.
2 - Prepare Shaker:
Fill a cocktail shaker with ice cubes to chill all ingredients thoroughly.
3 - Mix Drink:
Add gin, apple juice, lemon juice, and 30ml of the wheat & spice syrup per glass into the shaker. Shake vigorously for 15-20 seconds.
4 - Strain and Serve:
Double strain the mixture into a chilled lowball glass filled with fresh ice.
5 - Garnish:
Garnish each glass with a fresh apple slice, a cinnamon stick, and microplane a small pinch of nutmeg over the top for aroma.
