  • 1 - Prep the Beef and Vegetables:
    Cut beef into cubes, sprinkle with salt and pepper. Chop all vegetables and measure out powders and liquids for efficiency.
  • 2 - Brown the Beef:
    Heat oil and 1 tbsp butter in a heavy-bottomed Dutch oven over medium-high; dredge beef cubes in flour, shake off excess, and brown in batches until deep golden. Remove and set aside.
  • 3 - Sauté the Vegetables:
    Lower heat to medium. Add remaining butter; stir in onions, celery, carrots, and parsnip, cooking 8-10 min until softened but not colored.
  • 4 - Add tomato paste and deglaze:
    Stir in tomato paste for 1-2 min. Increase heat to high and pour in Belfast Black Ale, scraping the sticky bits from the pan.
  • 5 - Begin Braising:
    Return seared beef (and juices) to pot. Add beef stock, thyme, bay leaves, optional Worcestershire, and optional potatoes. Bring to a gentle simmer.
  • 6 - Slow Cook:
    Cover and reduce heat to low. Simmer very gently for 2.5 hours, stirring every 30 mins, until beef is fork-tender and sauce thickens.
  • 7 - Final Adjustments:
    Remove thyme/bay. Taste for salt/pepper. Skim any fat. Garnish with parsley. Serve hot with crusty Irish soda bread.
