조리법

  • 1 - Prep the Cabbage:
    Bring a large pot of salted water to a boil. Carefully peel 8–12 large cabbage leaves. Blanch 2–3 minutes until flexible but not mushy. Dunk immediately in cold water, drain, and pat dry.
  • 2 - Prepare the Filling:
    Heat 1 tbsp olive oil in a pan. Sauté onion, garlic, and mushrooms until softened, around 5 minutes. Add grated carrot, venison, salt, pepper, and thyme. Cook until the meat is browned and juices evaporate (~7 minutes).
  • 3 - Mix and Bind:
    Transfer mixture to a bowl. Stir in wild rice, roasted hazelnuts, rosemary, breadcrumbs, and beaten egg. Add crushed juniper berries now, if using. Mix thoroughly and let cool slightly.
  • 4 - Stuff the Cabbage Leaves:
    Place ~2 tbsp filling on each cabbage leaf’s base. Fold in sides, then roll up tightly towards the top. Place seam-side down.
  • 5 - Assemble and Bake:
    Preheat oven to 180°C. Arrange rolled leaves, seam-side down, in a greased roasting dish. Pour venison or beef stock over rolls. Cover tightly with foil.
  • 6 - Bake:
    Bake covered for 30 minutes. Remove foil and bake 10 minutes more for lightly browned tops.
  • 7 - Serve and Garnish:
    Drizzle with olive oil, spoon with a little stock, and garnish with fresh parsley. Dollop cranberry sauce on the side for a fruity finish.
