• 1 - Prepare Pine Needle Infusion:
  Lightly bruise pine needles using a mortar and pestle, or rolling pin, to release aromatics. Divide between two tall glasses.
• 2 - Build the Botanicals:
  Add gin, elderflower cordial, and lemon juice over the pine needles in each glass.
• 3 - Muddle for Aroma:
  Gently muddle ingredients with a muddler or a spoon, infusing the gin with pine essence.
• 4 - Add Ice and Sweetness:
  Fill the glasses completely with ice. Add simple syrup if a touch of sweetness is desired.
• 5 - Float the Tonic:
  Top each glass with chilled tonic water, pouring slowly to maintain effervescence.
• 6 - Garnish and Serve:
  Gently stir once. Garnish each glass with a twisted lemon peel and a small sprig of pine needle to evoke woodland aromas. Enjoy immediately.
