1 - Prepare Cornmeal Dough:
In a small bowl, gradually add 0.5 cup water to the cornmeal, mixing until a smooth, pliable dough forms without cracks.
2 - Form Meatballs:
Mix ground beef, chopped onion, garlic, salt, pepper, and parsley. Then, shape small meatballs about the size of a walnut.
3 - Incorporate Cornmeal into Meatballs:
Take a small piece of cornmeal dough and flatten it. Place a small meatball in the center, then wrap the dough around it forming a corn-covered meatball.
4 - Prepare the Broth:
Heat sunflower oil in a large pot over medium heat. Sauté carrots, bell pepper (if using) and remaining onions until soft. Pour in the beef broth and bring to a gentle boil.
5 - Cook Vori Vori Meatballs:
Gently drop the cornmeal-coated meatballs into the simmering broth. Cook for around 20 minutes until meatballs are cooked through and the broth is flavorful.
6 - Season and Serve:
Adjust salt and pepper to taste. Serve hot with fresh parsley garnish.
