1 - Prepare Vegetables:
Wash, core, and chop the tomatoes and red bell pepper. Peel and mince cucumber. Reserve one basil leaf and celery stick for garnish.
2 - Blend the Base:
Add tomatoes, cucumber, bell pepper, remaining basil, olive oil, vinegar (if using), salt, and pepper to a blender. Pour in cold filtered water. Blend until completely smooth.
3 - Strain & Chill:
Strain mixture through a fine sieve for silky texture. Pour into a clean jug; stir in gin if using. Chill with ice cubes for 2 minutes.
4 - Serve Up:
Pour into two tall glasses over remaining fresh ice. Garnish each with celery stick and a fresh basil leaf. Serve immediately while well-chilled.
