  • 1 - Prepare Chicken:
    Slice or butterfly the chicken breast into long, thin strips. Sprinkle with half the zaatar, salt, and pepper. Drizzle with olive oil and set aside.

    In a small bowl, mix Greek yogurt, chopped parsley, lemon zest, and minced garlic. Spoon in remaining zaatar and combine well. Reserve half for serving.
  • 3 - Roll Chicken in Pastry:
    Roll out the puff pastry into a rectangle on floured surface. Spread remaining yogurt mixture thinly over pastry. Lay chicken strips lengthwise on pastry. Starting with the long edge, roll up tightly into a log.
  • 4 - Slice and Arrange:
    Slice the rolled pastry into 4 equal sections. Place each roll, seam-side down, on a lined baking tray. Brush tops with beaten egg and sprinkle with sesame seeds (if using).
  • 5 - Bake:
    Bake in preheated oven at 200°C (390°F) for 25-30 minutes, or until golden brown and chicken is cooked through. Let cool slightly before serving.
  • 6 - Serve:
    Slice each roll at an angle. Serve warm, paired with reserved herbed yogurt for dipping, a green salad or pickles if desired.
