• 1 - Prepare Cocktail Mix:
  In a cocktail shaker, combine prickly pear juice, gin, lemon juice, honey syrup, and ice cubes.
• 2 - Shake Ingredients:
  Shake vigorously for 15-20 seconds until well chilled and mixed.
• 3 - Strain & Serve:
  Strain the mixture into two chilled cocktail glasses filled halfway with fresh ice.
• 4 - Top with Sparkling Water:
  Top each glass with 25ml sparkling water for fizz; stir gently.
• 5 - Garnish & Present:
  Garnish each glass with a lemon wheel and a chunk of prickly pear fruit if desired, serve immediately.
