• 1 - Muddle Ginger:
  Place fresh ginger slices in a cocktail shaker. Gently muddle them to release their flavors.
• 2 - Build the Drink Base:
  Add Caribbean rum, lime juice, simple syrup, pineapple juice, and Angostura bitters (if using) into the shaker with the ginger.
• 3 - Shake with Ice:
  Fill the shaker with half the crushed ice. Secure lid and shake briskly for about 20 seconds until well chilled.
• 4 - Strain over Fresh Ice:
  Fill two serving glasses with the remaining crushed ice. Fine-strain the shaken mixture into each glass evenly.
• 5 - Top and Garnish:
  Top each glass with ginger beer. Garnish with a lime wheel and candied ginger on a cocktail stick.
