Instructions

  • 1 - Prepare the Lamb Filling:
    In a large pan over medium heat, melt butter and brown the lamb pieces in batches. Set lamb aside.
  • 2 - Cook Vegetables:
    Add onion, carrot, celery, and garlic to the pan and cook until softened, about 5-7 minutes.
  • 3 - Add Flour and Ale:
    Sprinkle flour over the vegetables and stir well. Pour in ale gradually, stirring constantly to avoid lumps.
  • 4 - Simmer with Stock:
    Return lamb to the pan. Add beef stock, thyme, salt, and pepper. Simmer gently for 35-40 minutes until meat is tender and sauce thickened.
  • 5 - Preheat Oven and Prepare Pastry:
    Preheat oven to 200°C (392°F). Roll out pastry to fit your pie dish.
  • 6 - Assemble Pie:
    Transfer lamb filling into pie dish. Cover with pastry, sealing edges. Cut a small slit in pastry to release steam. Brush with egg yolk if desired.
  • 7 - Bake:
    Bake pie in preheated oven for 35-40 minutes or until pastry is golden brown.
  • 8 - Rest and Serve:
    Let pie rest for 5 minutes before slicing and serving.
